Ingredients

  • 6 bone-in, skin-on chicken thighs

  • Salt and freshly ground black pepper

  • 4 cloves garlic, thinly sliced

  • ¼ cup honey

  • 2 tablespoons low-sodium soy sauce

  • 1 tablespoon apple cider vinegar

  • 1 pound baby carrots

  • 1 pound Brussels sprouts, halved

  • 1 teaspoon dried thyme


Preparation Steps

  1. Prep and season.

    • Preheat oven to 425 °F (220 °C).

    • Pat chicken thighs dry; season both sides with salt and pepper.

  2. Sear the chicken.

    • Heat oil in a large oven-proof skillet (cast iron works best) over medium-high heat.

    • Nestle chicken thighs skin-side up into the skillet. Spoon a little glaze over each thigh.

    • Transfer skillet to the oven and roast for 20–25 minutes, until chicken reaches 165 °F and vegetables are tender.

  5. Glaze and serve.

    • Remove from oven and baste chicken once more with pan juices.

    • Let rest 5 minutes before serving straight from the pan.
