This recipe yields a tender, medium-rare pork tenderloin, its exterior cloaked in a glossy balsamic reduction that is at once sweet, tangy, and savory. Paired with shallots slowly sweated until honey-brown, it’s a dish that showcases both technique and the natural sweetness of its ingredients.
