Ingredients

Wings:

  • 1 large head cauliflower, cut into florets

  • ¾ cup all‑purpose flour

  • ¼ cup cornstarch

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • ½ tsp salt

  • ¼ tsp black pepper

  • ¾ cup water

Sauce:

  • 3 Tbsp sweet chili sauce

  • Juice and zest of 1 lime

  • 1 Tbsp honey

  • 1 tsp soy sauce

  • 1 garlic clove, minced


Step‑by‑Step Process

  1. Preheat & Prep
    Preheat oven to 425 °F (220 °C). Line a rimmed baking sheet with parchment and lightly spray.

  2. Make Batter
    Whisk flour, cornstarch, garlic powder, paprika, salt, and pepper. Gradually add water until batter is smooth and thick enough to coat florets.

  3. Coat Cauliflower
    Dip each floret into batter, letting excess drip off. Arrange in a single layer on prepared pan.

  4. Bake Initial Crisp
    Bake 20 minutes, flipping halfway, until edges start to brown.

  5. Prepare Sauce
    Whisk together sweet chili sauce, lime juice/zest, honey, soy sauce, and garlic.

  6. Glaze & Finish Baking
    Remove cauliflower, toss in half the sauce, return to oven 5 minutes. Brush with remaining sauce and bake 2–3 minutes more for a sticky finish.

  7. Serve
    Transfer to platter, garnish with cilantro and lime wedges.
